I got this recipe from a backpacking book.
I tryed them today, and they were great. It would stay fresh in a pack or days or weeks I guess.
It was easy to do, and was tasty.
pancakes for backpacking-
5-Minute Fruit Pancakes
There's more to a hot trail breakfast than plain old instant oatmeal.
1 cup dried apples, peaches, or pears
5 tablespoons powdered eggs
1/2 cup nonfat dry milk
2 cups whole wheat flour
2 teaspoons baking powder
1 3/4 cups water
1 tablespoon oil
* maple syrup, or brown sugar optional
At Home:
Combine the fruit, eggs, milk, floor, and baking powder in a self-sealing bag. Laabel with the recipe directions.
On The Trail:
Add the water to the floor mixture, just until combined. Bake the pancakes in a hotm lightly oiled skiller, turning when bubbles appear on the surface.
Serve with maple syrup, or brown sugar.
Makes four large pancakes.
